Fried anchovies

Anchovies oil salt

  • 800 gr. anchovy
  • flour for dusting  
  • peanut oil for frying  
  • salt to taste
  • lemon slices for garnish

First clean the anchovies removing the head and entrails. Quickly wash them under cold running water and let them drain.
Pour the peanut oil in a pan with high sides and bring to temperature. While the oil heats up, put the flour on a plane and flour them a few at a time. Mash them well in the flour, then remove the  flour in excess.
When the oil is at temperature, fry a few anchovies at a time .
When they become golden brown remove them from the pot with a slotted spoon and place on a plate lined with paper towels or even better with paper straw. Garnish with slices of lemon and add salt.
